Spicy Garlic Sauteed Kale

Yes, this is a recipe for Kale.  No, kale is not disgusting.  No, I am not a vegan hippie.  Super healthy, super delicious.

Ingredients

1 pound kale, center ribs discarded and leaves cut into 1 inch wide strips

2 tbsp olive oil

1 small onion, halved lengthwise and thinly sliced 

1 garlic clove, minced

2 tbsp dried hot red pepper flakes***

1 tbsp red-wine vinegar, or to taste

1/4 teaspoon garlic salt

***I like spicy food, so I was much more generous with the pepper flakes

-Cook kale in a pot of boiling salted water, uncovered, stirring occasionally until tender, about 5 minutes

-Heat olive oil in a skillet over high heat.  Saute onion until soft, about 10 minutes.

-Add garlic and pepper flakes, stirring frequently, about 1 minute.

-Reduce heat to moderate and add kale, stirring occasionally.

-Once heated through, remove from heat and stir in vinegar and salt.

Breakfast. Belgium waffles. Back to bed.
